My Water

I get all of my water from a local Cartesian Well.  The Frederick Miller Spring in Eden Prairie.

It's a fantastic resource and I have met fellow brewers collecting water as well.  
The "Ale Pales" are a pretty big give-away.  I always ask if they add anything or dilute the water. No-one I've met has. There has been some analysis done for the make-up of this water source provided by Premier Water Technologies.  It's very hard water with high alkalinity.  I'll invest in some Ph strips to find out how badly I'm missing the ideal 5.2 Mash Ph and take it from there.

Hardness: 20 gpg  (343 ppm)
Alkalinity: 240 ppm
pH: 7.51

"Usually, good brewing water for conducting the mash and creating the wort should be moderately hard and have low-to-moderate alkalinity"
